Steps:
- Core and seed peppers and cut into 1 1/2 inch pieces. Place in a large bowl. Cut onions into thin wedges; add to peppers. Cut potatoes in half and add to bowl. Cut kielbasa into 1/2 inch thick slices and add to bowl. Sprinkle with salt and pepper; toss with olive oil. Transfer to shallow 1 1/2 quart casserole dish. Cover with foil. Bake at 400 degrees for 45 minutes. Stir the cream in; cover and bake for another 10 minutes. Garnish with parsley and serve.
