Steps:
- Slice potatoes about 1/4" thick and blanch until just done. Remove and set aside. (If using leeks, blanche them now for 2 minutes.) Butter a 9" pie tin and arrange the potato slices on the bottom, slightly overlapping. Press to flatten. Reserve the additional slices. Spread lnions over potatoes. Combine the cheese, cream, eggs, salt and pepper. Pour over potatoes and onions and top with remaining potato slices. Baked at 350 for 45 minutes to 1 hour.
