CARAMELIZED ONION POTATO TART

1 large onion, sliced
Extra-virgin olive oil
Kosher salt and freshly ground black pepper
4 large Russet potatoes, washed
2 to 3 tablespoons butter, broken into small pieces
Special equipment: parchment paper cut into large circle to fit saute pan

Steps:

  • Preheat oven to 350 degrees F.
  • Set a large skillet over medium heat and add 4 tablespoons of olive oil. Add sliced onions and cook over medium heat for 10 to 12 minutes until they are tender and brown all over.
  • Using a mandolin (or sharp knife), finely slice the potatoes into rounds (you can place them in a bowl with a wet towel over the top to stop them from going brown while you work). Place the potatoes into a bowl and season with salt and pepper. When ready, add the onions and toss to combine without breaking potatoes.
  • Add about 1 tablespoon water to the same pan the onions were cooked in and allow it to come to a bubble. Using layered paper towels, wipe the pan clean.
  • Add some extra-virgin olive oil to the pan and add the potatoes to the pan, making sure the potatoes are flat. Top with the diced butter.
  • Take a piece of parchment paper and fold in half. Find the middle of the parchment along the crease and hold in place with your finger. Taking the right side of the parchment, pull it towards the center and fold it straight down to create a diagonal edge. Fold the parchment in half to create a triangle. Place the pointed edge in the middle of the saute pan on top of the potatoes to find its radius. Make a marker of where the pan edge ends (or starts). At this point you can cut the parchment at this marker and open to reveal a circle.
  • Cover the potatoes with the parchment paper and press down. Drizzle some extra-virgin olive oil over the top so it down burn and rub it in.
  • Place the pan into the oven on the top rack and bake for about 45 minutes.
  • When done remove from oven and run a knife around the edge to separate from the pan. Place a large plate on top of the saute pan and flip. Remove the saute pan. Allow to cool slightly before cutting into slices.

250g pack shortcrust pastry , fresh or frozen
25g butter
1 tbsp olive oil
2 onions , sliced
1medium potato , peeled and sliced
2 garlic cloves , crushed
2 tbsp fresh thyme leaf
140g goat's cheese , broken into pieces
3 eggs
200g carton crème fraîche , half fat is fine
100g bag rocket to serve, optional

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Roll out the pastry so it is large enough to fit a deep 23cm loose-bottomed tart tin, then line the tin with the pastry. Chill for 30 mins. Line the pastry with greaseproof paper, fill with baking beans and bake for 15 mins. Remove the paper and beans and return the tin to the oven for 5 mins until golden, then remove and set aside. Reduce oven to 180C/fan 160C/gas 4.
  • Heat the butter and oil in a large frying pan, add the onions and potato and cook over a very gentle heat for 10-15 mins, turning occasionally, until golden and tender. Season if you want to, then add the garlic and thyme leaves, and cook for a further 3 mins. Tip into the pastry case along with the goat's cheese and spread out evenly.
  • Whisk the eggs and crème fraîche together, season if you want to, then pour into the pastry case and bake for 30-35 mins until lightly golden brown and just set in the centre. Serve warm, with rocket leaves scattered over if using.

1/2 box instant pie crust mix
2 tablespoons canola oil
2 large onions, thinly sliced
Salt and freshly ground black pepper
1 russet potato, sliced thinly
4 ounces cream cheese, softened
1 tablespoon Italian seasoning
1 tablespoon spicy brown mustard

Steps:

  • Preheat the oven to 375 degrees F.
  • Prepare the pie crust according to package instructions. Flatten into a disk and chill in the refrigerator while preparing the filling.
  • In a large saute pan over medium heat, heat the canola oil. Add the onions and season with salt and pepper. Cook, stirring occasionally, until the onions are dark golden brown, 10 to 15 minutes. Remove from the heat.
  • In the meantime, using the slicing blade attachment of a food processor, or with a box grater, slice half the potato into 1/8-inch-thick slices. Place in cold water to avoid browning. (Reserve the remaining half of potato for another use, such as Round 2 Recipe Open Faced Roast Pork and Onion Sandwich.)
  • In a small bowl, stir together the cream cheese, Italian seasoning, mustard and season with salt and pepper.
  • Remove the pie crust from the fridge and roll into a 12-inch round about 1/4-inch thick. Place on a parchment-lined baking sheet. Spread the cream cheese mixture in an even layer over the pie crust, making sure to leave a 1-inch border around the edge.
  • Dry the potatoes thoroughly and place an even layer on top of the cream cheese, overlapping slightly to fit and keeping 1/2-inch from the edge of the cream cheese. Over the top of the potatoes place an even layer of caramelized onions. (Reserve 1/2 cup of the onions for another use, such as Round 2 Recipe Open Faced Roast Pork and Onion Sandwich.) Fold over the edges of the crust to create a 1-inch-wide border around the tart filling.
  • Bake until the crust is golden and the potatoes are cooked through, 30 to 35 minutes. Allow to cool for 5 minutes before slicing.

250 g shortcrust pastry, fresh of frozen
25 g butter
1 tablespoon olive oil
2 onions, sliced
1 medium potato, peeled and sliced
2 garlic cloves, crushed
2 tablespoons fresh thyme leaves
140 g goat's cheese, broken into pieces
3 eggs
200 g creme fraiche

Steps:

  • Heat oven to 190 degrees Celsius Roll out pastry to fit a deep 23cm loose bottomed tart tin. Wrap pastry carefully around rolling pin and unravel over tart tin. press gently around sides of tin. Chill 30 minutes, then line with greaseproof papter and fill with baking beans. Bake blind 15 minutes. Remove paper and beans and return tin to oven 5 minutes until pastry is golden. Remove tin from oven and set aside. Reduce oven temperature to 180 degrees Celsius.
  • Heat butter and oil in a large frying pan and add onions and potato. Cook gently 10-15 minutes, turning every so often until veg is golden and tender. Season to taste, then add garlic and thyme. Cook another 3 minutes. Tip filling into pastry case. Add goat's cheese and spread in an even layer.
  • Whisk eggs and creme fraiche together. Season to taste and pour into pastry case. Bake 30-35 minutes until lightly golden brown. You may have to cover edges of pastry with foil half-way through to prevent pastry burning. Tart is done when center is just set. Serve warm.

CARAMELIZED ONION AND SWEET POTATO TART

It may look daunting, but this is worth the effort! I've made this for some very picky eaters and I have yet to hear a complaint! If you cannot find Manchego cheese (it is a soft Spanish cheese) or Gruyere, you can use mozzarella and Swiss instead. I have done this before with good results.

2 cups all-purpose flour
1/4 cup cold butter
1/3 cup shortening
1/3 cup cold water
1 pinch salt
1 lb yukon gold potato
1 lb sweet potato
3/4 lb parsnip
3 tablespoons olive oil
1 1/3 lbs yellow onions, sliced 1/4 inch thick
4 garlic cloves, chopped
1 tablespoon herbes de provence
1 cup manchego cheese, grated
1/2 cup gruyere cheese, grated
1/2 cup heavy cream
salt and pepper

Steps:

  • Make Pastry: combine flour, butter, shortening and salt and lightly mix until it resembles breadcrumbs. Blend in enough water to form a dough. Wrap in clingfilm and refrigerate for at least 30 minutes.
  • To make Tart: Pare yukon gold potatoes, slice 1/4 inch thick and put in cold water.
  • Pare and slice sweet potatoes and stand in cold water. do the same with the parsnips.
  • Steam potatoes, parsnips and sweet potatoes until al dente. Set aside.
  • Heat oil and saute onions until caramelized and golden brown in color. Add Herbes de Provence and garlic and saute for 3 more minutes. Set aside.
  • Mix manchego, gruyere and cream together in bowl and set aside.
  • Preheat oven to 350°F.
  • Roll out pastry and press into bottom and sides of a 9 inch springform pan.
  • Layer potatoes, sweet potatoes and parsnips in tart and sprinkle onions and cream/cheese. Repeat until all ingredients are used.
  • For maximum appearance make sure to finish the top layer with sweet potatoes, then caramelized onion.
  • Bake 45 minutes in preheated oven.
  • Remove from oven and allow to sit for 20 minutes.

12 sprigs thyme, strip the leaves from the stems
1 large onion, sliced somewhat thickly (a tad more than 1/4 inch thick)
1 lb waxy red potatoes, washed and very thinly sliced

1/2 cup grated gruyere cheese
1/2 cup crumbled feta cheese
1 cup grated mozzarella cheese

Steps:

  • Preheat oven to 400*F.
  • Melt the butter in a 9-10 inch ovenproof frying pan (cast iron is great) over medium heat. Add the thyme and onion and cook for 5 minutes. Spread out evenly in the pan.

6 slices bacon, crisply cooked, crumbled

8 oz Gruyère cheese, shredded (2 cups)
1 1/2 cups half-and-half
4 eggs
1 teaspoon chopped fresh rosemary leaves

Steps:

  • Heat oven to 425°F. Spray 15x10x1-inch pan with cooking spray. In large bowl, toss sweet potatoes, onion, oil and seasoned pepper blend. Arrange mixture in single layer in pan. Roast 20 minutes, stirring after 10 minutes, just until potatoes are tender. Cool completely, about 30 minutes.
  • Meanwhile, unroll pie crusts; stack on lightly greased surface. Roll into 12-inch round. Press round in bottom and up side of 10-inch deep-dish tart pan with removable bottom. 250g Onion (Red/White/brown or even Shallots!)
250g Broccoli
250g Potatoes
250g Blue Cheese
375ml Cream
2-3 eggs
Handful of chopped fresh herbs (Sage/Thyme/Marjorm, whatever you like!)

Steps:

  • 1. Grease a tart dish and line wth the pastry sheet. Cook the pastry until just brown, and put aside. 2. Slice the onions and potatoes and fry in the butter until potatoes start to soften. 3. Chop broccoli to bite size peieces and add to the onions/potatoes. Stir through until broccoli softens (just a few minutes). Season with salt/pepper. Leave for 10 minutes to cool. 4. In a jug, mix the eggs and cream together. 5. Fill the pastry to the top with the vegetables and level out. Top up with the egg/cream mixture. Crumble the cheese evenly over the top, and sprinkle with the chopped herbs. Season with salt and pepper. 6. Cook for 20-30 minnutes until starts to turn golden. Serve either hot or cold! 5.

  • Preheat oven to 425°. Toss together first 4 ingredients in a large bowl; arrange mixture in a single layer in a lightly greased 15- x 10-inch jelly-roll pan. Bake 20 minutes or just until potatoes are tender, stirring after 10 minutes. Cool completely in pan on a wire rack (about 30 minutes). Stir in bacon and parsley. 1 Batch basic tart dough
1 lb large Yukon Gold potatoes, peeled and sliced 1/8" thick
6 oz. Reblochon cheese, sliced 1/8" thick
1/2 lb. bacon, cut into 1/2" pieces and fried
1 c thinly sliced green onions, white and light green portions
Salt and freshly ground pepper to taste
1/4 c heavy cream

  • On floured surface, roll out tart dough about 1/8" thick. Set dough on tart pan and gently press into bottom and sides of pan. Using rolling pin, roll over top of pan to cut off excess dough. Freeze 30 minutes. Preheat oven to 425 degrees. Line tart shell with prchment; fill with pie weights. Bake 10 minutes. remove weights and paper; bake 5-8 minutes. Cool 5-10 minutes. Bring saucepan of salted water to boil over medium high heat. Simmer potatoes until just tender 4-6 minutes. Drain in colander. Place half of cheese slices on bottom of crust. Layer half of potatoe slices on cheese in overlapping pattern. Sprinkle half of bacon and green onions on top; lightly season with salt and pepper. Repeat layering with remaining potatoes, bacon and green onions; top with remaining cheese. Pour cream evenly over tart. Bake about 25 minutes. Let tart stand 5 minutes; remove from pan.

450 g onions, sliced
2 garlic cloves, crushed
1 tablespoon thyme
750 g floury potatoes, peeled & sliced
2 eggs
200 ml creme fraiche
2 tablespoons whole grain mustard

Steps:

  • Preheat the oven to 220C/fan200C/Gas7. Use the pastry to line the base and sides of a swiss roll tin 23x33cm. Heat the oil in a large frying pan; fry the onions for 8-10 minutes until just beginning to caramelise. Stir in the garlic and most of the thyme; cook for a further 2 minutes. Scatter half into the case.
  • Parboil the potatoes in salted boiling water for 4-5 minutes; drain well and arrange in the case. Scatter over the remaining onions.
  • Beat together the eggs, creme fraiche and mustard. Season well and pour over the top. Scatter over the rest of the thyme and bake the tart for 20 minutes, until the filling has set and is golden.

3 tbsp olive oil
6 medium red onions, finely sliced
5 tbsp red wine vinegar
100g cranberry sauce
1kg sweet potatoes, peeled and cut into small chunks
1 tsp chilli flakes
2 x 320g sheets ready-rolled puff pastry
3 x 100g soft goat's cheese with rind, broken into large chunks
beaten egg, for glazing
thyme sprigs, to serve
a large salad, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Heat 2 tbsp of the oil in a large non-stick frying pan and cook the onions over a low heat for 20-25 mins or until well softened and lightly browned. Add the vinegar and cranberry sauce, and simmer for 5-10 mins more, stirring until almost all the liquid has disappeared. Leave to cool.
  • Meanwhile, put the sweet potatoes in a bowl and toss with the remaining oil, 1/2 tsp salt, 1/2 tsp pepper and the chilli flakes. Arrange on a baking tray and cook for 20 mins, turning halfway, until softened and lightly browned. Leave to cool.
  • Reduce oven to 180C/160C fan/gas 4. Line two large baking trays with baking parchment and unroll the pastry sheets on top - trimming the edges neatly at this point will encourage a good rise. Leaving a 2cm gap around the edge, spread the onions over the pastry, then top with the sweet potatoes and goat's cheese. Brush the beaten egg around the border of the pastry and bake in the oven for 35-40 mins or until the pastry is golden and crisp, swapping the shelves after 20 mins.
  • Scatter over the thyme, then cut each tart into quarters (or smaller pieces if serving more). Serve with a large leafy salad.

Remove the weights and paper and continue to bake until the shell is light golden brown, 5 to 8 minutes more. Transfer the pan to a wire rack and let cool for 5 to 10 minutes. Meanwhile, bring a saucepan of salted water to a boil over medium-high heat. Add the potatoes and simmer until just tender, 4 to 6 minutes. Drain the potatoes in a colander. Place half of the cheese slices on the bottom of the crust. Layer half of the potato slices on the cheese in an overlapping pattern. Sprinkle half of the bacon and green onions on top, and lightly season with salt and pepper. Repeat the layering with the remaining potatoes, bacon and green onions, then top with the remaining cheese. Pour the cream evenly over the tart. Bake until the cream is bubbling and the cheese is light golden brown, about 25 minutes. Let the tart stand for 5 minutes, then remove it from the pan and serve. Serves 4 to 6.

3 russett potatoes, peeled
1 large onion, chopped
1 Tbs butter, soft
1 1/2 cups light cream
4 eggs
1/2 tsp salt
1/2 tsp pepper
1 cup grated Buttercheese or Swiss

Steps:

  • Slice potatoes about 1/4" thick and blanch until just done. Remove and set aside. (If using leeks, blanche them now for 2 minutes.) Butter a 9" pie tin and arrange the potato slices on the bottom, slightly overlapping. Press to flatten. Reserve the additional slices. Spread lnions over potatoes. Combine the cheese, cream, eggs, salt and pepper. Pour over potatoes and onions and top with remaining potato slices. Baked at 350 for 45 minutes to 1 hour.

I HATE pie crust, so I combined the potato crust from here (http://bit.ly/W2te6) with the filling from here (http://bit.ly/4AH8lZ) to get a fantastic brunch dish! Be sure to use Russet or Idaho potatoes; you want a dry, starchy potato.

1 1/2 lbs russet potatoes
1/4 cup grated parmigiano
1/4 cup all-purpose flour
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
4 tablespoons butter
4 onions, peeled and sliced thin
kosher salt
ground black pepper
1 1/2 cups half-and-half
2 eggs
2 egg yolks
1/2 cup grated gruyere
1 pinch cayenne pepper

Steps:

  • Preheat oven to 450°F Generously butter a pie dish.
  • Peel the potatoes and grate them (on a box grater or in a food processor). Toss the potato shreds with the Parmigiano, flour, salt, and pepper. Press the mixture into the buttered dish, pressing firmly and pressing the crust up the sides as well. Bake 30 minutes, until the potatoes have firmed and dried. When removing the dish from the oven, turn the heat down to 375°F.
  • Meanwhile, melt the butter in a heavy skillet. Add the onions and cook slowly 20-30 minutes until golden brown and very soft. Add salt and pepper to taste, tasting to be sure they are delicious alone. Cool to nearly room temperature.
  • Whisk together the remaining ingredients. When cooled, spread the onions into the potato crust and pour the custard over. Bake in 375F oven 35-40 minutes, until the top browns and puffs. Cool 10 minutes before slicing, to allow the custard to firm up.
