Steps:
- Peel and dice onion and potatoes.
- Melt butter in a stock pot and saute onions until lightly browned, about 8 minutes.
- Add potatoes and soup stock and bring to a boil. Then reduce the heat to a simmer and cook covered for until potatoes are tender. About 20 minutes.
- Add lovage leaves and simmer an additional 5 minutes.
- Remove the soup from heat and allow to cool for several minutes. Then stir in the milk.
- With an immersion (stick) blender, liquify the potatoes and lovage leaves.
- Season with fresh pepper, julienned lovage leaves for garnish, and/or celery seeds. Serve hot or cold.
