POTATO CHIP OMELET image

6 eggs
2 1/2 oz salted potato chips
1 1/2 T olive oil

Steps:

  • Break eggs in bowl and beat with whisk until very frothy. Add chips, don`t break. Let soak in egg for 1 minute. Use 10 inch frying pan, medium heat, add 2 teaspoons oil. Add egg to pan and stir gently with rubber spatula. Use the spatula to loosen omelet from edge of pan. After 40 seconds, when omelet has set on bottom, invert on plate. Add 2 teaspoons oil to pan, slide omelet back in. Cook for another 20 seconds. Serve.
