Portuguese Steamed Clams image

Number Of Ingredients 10

2 tablespoons polyunsaturated oil
1 pound hot Italian sausage
1/2 cup shallot
4 cloves garlic, diced
1/2 teaspoon crushed red pepper
1 large can diced tomato in juice
1 cup low salt chicken stock
2 tablespoons balsamic vinegar
4 pounds littleneck clams
1/2 cup fresh basil, coarsely chopped

Steps:

  • Heat the olive oil in a large pot. Add the sausage, sauté until cooked through, breaking up with a fork. Add the shallots, garlic and pepper flakes and stir well. Pour off the excess fat. Mix in the tomatoes and juices, chicken stock and vinegar. Add the clams, bring to a boil and cook until all the clams open. Mix in the basil.
