PORTOBELLO AND ASPARAGUS FAJITAS image

Number Of Ingredients 16

2 lbs portobello mushrooms, stems trimmed to 1/2" long
32 spears of asparagus
1 c Sweet Chipotle Dressing:
1 T diced yellow onion
1 T chopped garlic
2 T Dijon mustard
1/4 t cumin
1/2 c diced fresh tomatoes
2 T chopped cilantro
2/3 c seasoned rice wine vinegar
1/4 t black pepper
1 t salt
2 T honey
2 T Chipotle puree
1/2 c olive oil
1 c roasted, peeled, seeded red peppers

Steps:

  • Marinade: place all ingredients in blender or processor and blend until very smooth. Slowly add oil in a thin stream. Keeps for 5 days. Marinate portobellos and asparagus in the dressing while the grill heats up. Place mushrooms stem side down and grill about 2 min. Add asparagus to grill and turn mushrooms cap side down. Slice portobellos and serve with accompaniments.
