PORK TENDERLOIN SLICES OVER PASTA image

1 pork tenderloin, 3/4 to 1 lb.
1/3 lime section (sliced from the side -- not the equator)
1 tbs. extra virgin olive oil
1 tbs. soy sauce (omit if low-sodium required)
pasta of choice, including whole grain, eggless, etc.

Steps:

  • Mix extra virgin olive oil, juice from lime, and soy sauce in a wide bowl. Slice pork tenderloin on the diagonal into 1/2 to 3/4 inch thick slices (8 to 10 slices for 3/4 to 1 lb tenderloin). Place slices into marinade and turn to coat. Allow to sit in bowl unrefrigerated for 20 to 30 minutes. Preheat non-stick skillet to medium-high and saute pork slices 3 to 4 minutes per side or until only slighty pink inside. They will be extremely juicy. Remove from pan and allow to "rest" for at least five minutes. Depending on your pasta choice, you will have cooked your pasta to be done at the time the pork is ready to be served. Plate the pasta on two dishes, top with the pork, and pour any remaining pan juices over. Serve with steamed broccoli or green beans. Grate manchego or parmesan over all.
