PORK MEDALLIONS WITH TANGY MAPLE SAUCE image

Number Of Ingredients 6

3 oz pork tenderloin (sliced and flattened to 3/8 inch thick)
one green onion thinly sliced
¼ Cup apple juice or cider
½ tsp. dijon or brown mustard
2 tsp. maple syrup
1 tsp. red wine or cider vinegar

Steps:

  • Sprinkle both sides of pork with pepper. Spray cold skillet with cooking spray. Heat over medium heat. Add pork and cook for 2 minutes, turn and cook 2 more until slightly pink. Remove from pan and keep warm. Add green onion and cook for 30 seconds. Add apple juice and mustard. Stir well to mix - cook 2 minutes or till slightly reduced. Add maple syrup and vinegar and cook one additional minute. Return pork to pan and heat through. Serve over couscous.
