PORK CHOPS WITH PEAR COMPOTE image

1/4 cup dried cranberries
1 pear, cored & diced
1/4 cup chopped walnuts
1 pinch ground cinnamon
2 tbsp unsalted butter
4 boneless pork chops
1/4 tsp salt
1/4 tsp pepper
1 tsp sugar

Steps:

  • Soak cranberries in hot water for 5 minutes. Meanwhile, combine pear, walnuts, and cinnamon in a small bowl. Drain cranberries and add to bowl. Melt the butter in a large skillet over medium-high heat. Season one side of the pork cutlets with salt and pepper. Place pork, seasoned-side-down, in a hot skillet and cook 2 minutes. Season with salt and pepper, flip, and cook additional 2 minutes. Remove to plate Add pear mixture and sugar to skillet and cook 1 minute. Remove from heat, spoon pear compote over pork and serve.
