Pork Chops with Bourbon-Peach Sauce image

Found this recipe on the internet when we were lucky enough to get some great Georgia peaches and I was trying to figure out something to do with them. Turned out fantastic! I would double the sauce though...can not get enough of this sauce. Recipe from: http://www.myrecipe.com

Number Of Ingredients 13

4 - 4oz boneless center-cut loin pork chops (about 1/4 inch thick)
3/4 teaspoon(s) salt
1/4 teaspoon(s) pepper
1/4 teaspoon(s) ground red pepper
2-3 tablespoon(s) olive oil or cooking spray
1 tablespoon(s) minced shallots
1 clove(s) minced garlic
1 1/2 cup(s) frozen peaches (use as many peaches as you want. the more the better in our experience)
1/2 cup(s) chicken broth
2 teaspoon(s) brown sugar
2 - thyme sprigs
2 tablespoon(s) bourbon
2 teaspoon(s) butter

Steps:

  • 1. Sprinkle pork with salt and peppers. Heat a large skillet over medium-high heat. Coat pan with cooking spray. Add pork to pan; cook 2 1/2 minutes on each side or until browned. Remove pork from pan; keep warm.
  • 2. Add shallots and garlic to pan; sauté 30 seconds. Add peaches and broth to pan; sauté 2 minutes. Add sugar and thyme to pan; cook 1 minute. Add bourbon and butter to pan; cook 4 1/2 minutes or until butter melts and sauce is slightly thickened. Discard thyme sprigs. Serve with pork.
