PORK AND HOMINY CHILI image

Number Of Ingredients 14

2 t canola oil
8 oz boneless center-cut pork chops, trimmed and cubed
1 c chopped onion (about 1 med)
¾ c chopped green bell peppers
2 t bottled minced garlic
1 T chili powder
2 t cumin
¼ t salt
¼ t freshly ground black pepper
1/8 t ground red pepper
¼ c no-salt-added tomato paste
1 (15.5 oz) can golden hominy, rinsed and drained
1 (14.5) oz can fat-free less-sodium chicken broth
¼ c light sour cream

Steps:

  • 1.Heat oil in a large saucepan over med--high heat. Add pork to pan; sauté 5 min or until lightly browned. Add onion, bell pepper, and garlic to pan; sauté 5 min or until tender. Stir in chili powder and next 4 ingredients (through red pepper). Cook 1 min, stirring constantly. Stir in tomato paste, hominy, tomatoes, and broth; bring to a boil. Reduce heat, and simmer 10 min. Serve with sour cream.
