Poppy Seed Coffee Cake image

I begged and begged for this recipe. Finally, my neighbor gave it to me this weekend. It is a wonderful coffee cake.

Number Of Ingredients 13

2/3 cup(s) butter, softened
1 cup(s) sugar or splenda
3 - eggs, separated
1 teaspoon(s) vanilla
2 1/2 cup(s) flour
3 tablespoon(s) poppy seeds
3/4 teaspoon(s) baking powder
1/2 teaspoon(s) baking soda
1/2 teaspoon(s) salt
FILLING
1/3 cup(s) brown sugar, firmly packed
4 teaspoon(s) cinnamon
1/2 teaspoon(s) instant coffee powder

Steps:

  • Cream butter and sugar using mixer in a large bowl, then beat in egg YOLKS and vanilla.
  • Combine flour, poppy seeds, baking powder, baking soda and salt; add to creamed mixture alternately with buttermilk.
  • In small bowl with mixer, beat egg whites until stiff peaks form; fold into batter.
  • Pour half of the batter into a greased 13 x 9 pan; combine filling ingredients and sprinkle over batter.
  • Carefully top with remaining batter and bake at 350 degrees for 35-40 minutes or until toothpick inserted in center comes out clean; cool on wire rack and serve.
