Steps:
- Combine bay leaves, salt, mustard, cayenne, file, cumin, pepper, and thyme in a small bowl and set aside.
- In a large heavy (preferrably cast iron) skillet, melt margarine over high heat.
- Add ham and sausage, cook 5 minutes, stirring occasionally.
- Add onions, celery, bell peppers, and garlic.
- Cook until brown, about 10-12 minutes, stirring and scraping the bottom.
- Stir in rice and cook 5 minutes, stirring and scraping.
- Add the stock, stir well.
- Bring mixture to boil; reduce heat and simmer until rice is tender but still crunchy, about 20 minutes, stirring occasionally.
- Remove bay leaves before serving.
