Steps:
- 1. Rinse & drain black beans and corn, then add to crockpot. Add Rotel, lime juice, onion, cilantro and chicken to crockpot; mix and then cover. In a small microwave safe bowl combine bouillon cubes with 1/2 C of water. Place in microwave on high for 1 minute. Stir and then add to crockpot; mix then cover crockpot. Cook on low for 8 hours OR on high for 4 hours. Before serving chop/shred VERY TENDER chicken with fork and stir. Crunch tortilla chips on top. garnish with advocado slices, sour cream and shredded cheese and serve with yellow or spanish rice and warm flour tortillas.
