Pollo Facil - (EASY) Crockpot Chicken image

Three meals in one! $2.00 per serving! ;) My family absolutely LOVES when I make this SUPER easy slow cooker meal! They love it the first time, then the next night when I use it for tacos and/or taco salad. And they love it the next afternoon when I use any leftover leftovers for an easy afterschool snack...Nachos!...

2 can rinsed & drained black beans
2 can drained corn
2 can rotel
6 chicken breast halves, skinless and boneless
1 md yellow onion, chopped
1 poblano, chopped
2 Tbsp fresh cilantro, chopped
1/4 c lime juice
1 chipotle bouillon
1 garlic bouillon
1 beef bouillon
tortilla chips
sour cream
avocado, sliced
shredded cheese
flour tortillas

Steps:

  • 1. Rinse & drain black beans and corn, then add to crockpot. Add Rotel, lime juice, onion, cilantro and chicken to crockpot; mix and then cover. In a small microwave safe bowl combine bouillon cubes with 1/2 C of water. Place in microwave on high for 1 minute. Stir and then add to crockpot; mix then cover crockpot. Cook on low for 8 hours OR on high for 4 hours. Before serving chop/shred VERY TENDER chicken with fork and stir. Crunch tortilla chips on top. garnish with advocado slices, sour cream and shredded cheese and serve with yellow or spanish rice and warm flour tortillas.
  • 2. The best part - LEFTOVERS: Use leftovers for Tacos, Nachos or Taco Salad!
