Steps:
- Cut off wing tips. Remove backbone, cut out wishbones. Remove keel-shaped breastbone. Pound chicken lightly with a meat mallet until it is approx even thickness. Rub all sides of chicken with adobo. Put in a plastic bag. Mix vinegar, water, garlic, lemon juice. Pour into plastic bag, drop in bay leaves. Refrigerate at least 2 hrs or overnight, turning occasionally. Cook on well-oiled grill. Place baking sheet over chickens & weigh down with foil-covered bricks. Start skin side down, then flip chicken & cook until juices run clear (about 30 min).
