Polish Sausage Soup image

What a recipe. Each time I take it for a dish to pass, I spend time filling out recipe cards for people. Unusual, great presentation, did I say unusual? Tasty and the broth is spiced just right. This recipe came to me from a Better Homes and Gardens, Fix it Fast Recipe book about 25 years ago.

Number Of Ingredients 14

1 c chopped cerley
2 Tbsp butter
2 can(s) 13 oz beef broth (campbells)
1 Tbsp minced onion
1/2 tsp ground dry mustard
1/4 tsp garlic powder
1/4 tsp dried oregano
1/4 tsp dried basil
1 lb polish sausage sliced
1 green beans 16 oz
1 Tbsp corn starch
1 Tbsp cold water
1/2 c mozzarella cheese
1/2 c croutons

Steps:

  • 1. In large saucepan cook celery in butter till tender. Add beef broth, onion, dry mustard, garlic powder, oregano, and basil. Heat to boiling. Stir in Polish Sausage and green beans. Reduce heat and simmer for 15 minutes.
  • 2. Combine corn starch and water. Stir into soup. Cook and stir till slightly thickened and bubbly. Sprinkle cheese and croutons over individual servings.
