You can use from 1-3 pounds of sausage depending on your tastes. I love dipping buttered rye bread in the soup - must be my Polish genes.

2 tablespoons butter
1 1/2 lbs lean fresh kielbasa or 1 1/2 lbs smoked kielbasa, sliced
1 cup chopped onion
2 cups chopped celery
4 cups shredded cabbage
2 cups sliced carrots
1 bay leaf
1/2 teaspoon dried thyme
2 tablespoons white vinegar
3 cups beef broth
2 cups water
3 cups peeled and cubed potatoes
salt and pepper
chopped fresh dill (optional)

Steps:

  • Melt butter in a large skillet, add sausage, onions and celery, and cook over medium heat until sausage are lightly browned.
  • Pour mixture into a soup pot and add remaining ingredients except for potatoes.
  • Bring to a boil, reduce heat, cover and simmer for 1 hour.
  • Add potatoes and cook until potatoes are tender.
  • Season with salt and pepper and garnish with dill, if desired.

4 cups cabbage and carrot coleslaw mix (packaged)
1 large onion, chopped
2 teaspoons caraway seeds, crushed
1 lb Polish sausage, cooked, halved lengthwise and cut into 1/2 inch slices
4 cups fat free chicken broth

Steps:

  • Place potatoes, coleslaw mix, onion, caraway seeds and sausage in crock pot. Pour broth over all.
  • Cover; cook on low for 10 - 12 hours or high for 5 - 6 hours.

SLOW COOKED POLISH SAUSAGE, CABBAGE AND POTATO SOUP

My version/combination of several other recipes. I only cook for myself but this lasts several days in the fridge for reheating portions. Delicious with a crusty roll!

2 small jacket potatoes (fist sized, would fit in a mug)
1/2 lb medium-course Polish sausage (I use half a pack of Torunska)
1 large onion
1/2 cabbage
2 reduced salt chicken stock cubes
sprinking garlic
sprinkling parsley
sprinkling black pepper

Steps:

  • Wash and dice the potatoes (no need to peel unless it's how you prefer them) and place them at the bottom of the slow cooker/crock pot. Two small potatoes approximately 450g total weight.
  • Slice the sausage length ways and then cut into slices. I personally slice them in half again so the pieces are roughly the same size (or slightly larger) than the diced potato. Put the sausage on top of the potatoes in the pot.
  • Finely dice the onion and add that on top of the sausage.
  • Chop the cabbage and add that on top of the onion.
  • Season with garlic, parsley and plenty of cracked black pepper. Don't add salt as the amount of salt coming from the sausage can vary.
  • Prepare the chicken stock to make up 1 litre (the stock cubes I use are 1 cube per 500ml so I mix two) and pour the stock over the other ingredients. Again, I use reduced salt stock cubes. You can always add more salt later.
  • Cook on high for 6 hours, medium for 8 hours or low for 10 hours (based on Morphy Richards slow cooker). Stir half way through to ensure everything gets a good 'submerging' or if you can't then closer to the finish time is fine.

1/4 c celery, finely chopped
5 potatoes, cut up
1/2 lb polish sausage, browned & sliced
20 oz chicken broth

6 cups no-salt-added chicken stock
½ cup white cooking wine
2 potatoes, peeled and diced
½ (5 ounce) package frozen cut spinach
½ cup heavy whipping cream
¼ cup grated Parmesan cheese
2 teaspoons sea salt
1 teaspoon hot sauce (such as Cholula®)
½ teaspoon ground thyme
½ teaspoon ground black pepper
¼ teaspoon ground sage
¼ teaspoon red pepper flakes

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Cut ends off spaghetti squash; pierce skin in several places with a sharp knife. Transfer to a glass baking dish.
  • Bake in the preheated oven until interior can be easily pierced with a fork, about 1 hour. Cool until easily handled, at least 20 minutes. Cut in half. Scoop out seeds and discard. Scrape flesh into strands with a fork.

2 smoked sausage (polish or other)
1 1/2 T butter
1 1/2 T Olive Oil
1 onion
1 leek
1 stalk celery
2 medium carrots
3 T flour
3 medium potatoes
1/2 t salt
1/4 t thyme
1/4 t pepper
4 c chicken stock
1 c medium to sharp cheddar cheese or other flavorful strong cheese (optional)

Steps:

  • Melt butter and add olive oil to pan over medium high heat. Slice sausage on diagonal and add to pan in batches. Cook until browned with a nice crust (not too dark). Remove browned sausage from pan and set aside. Chop onion, leek (be sure to clean well to remove grit), celery and carrots and add to pan used to cook sausage. Season with salt and pepper and cook until vegetables are soft. Add flour and cook briefly. Add chicken stock and remaining spices and stir well. Bring to a boil add sliced, peeled potatoes, return to a boil and reduce to simmer until potatoes are cooked and falling apart. To make soup creamier, take part of soup and whirr in a food processor or use a hand blender. Leave some of the potatoes chunky for texture. Add cooked sausage and cheese if desired. Season to taste.

2 Tbsp butter
2 can(s) 13 oz beef broth (campbells)
1 Tbsp minced onion
1/2 tsp ground dry mustard
1/4 tsp garlic powder

1 lb polish sausage sliced
1 green beans 16 oz
1 Tbsp corn starch
1 Tbsp cold water
1/2 c mozzarella cheese

  • 1. In large saucepan cook celery in butter till tender. Add beef broth, onion, dry mustard, garlic powder, oregano, and basil. Heat to boiling. Stir in Polish Sausage and green beans. Reduce heat and simmer for 15 minutes.
  • 2. Combine corn starch and water. Stir into soup. Cook and stir till slightly thickened and bubbly. Sprinkle cheese and croutons over individual servings.
