PLUM CRUMBLE COBBLER image

Walnut Crumb Topping
3/4 cup (3 3/4 ounces) all-purpose flour
3/4 cup packed (5 3/4 ounces) brown sugar
3/4 cup (3 ounces) raw walnuts, coarsely chopped
1 1/2 teaspoons ground cinnamon
1/4 teaspoon fine sea salt
6 tablespoons (3 ounces) unsalted butter, melted
Filling:
1 (20oz) plums prepared in the spring
2 Tbsp corn starch
1/4 teaspoon ground cinnamon
1 cup (110 g) all purpose flour
1 1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup (50 g) butter
1/4 cup (60 mL) milk
1 egg, lightly beaten
some instant tapioca

Steps:

  • Make the crumb stuff first and set in fridge. Put the plums in the jam making pot and cook until it boils. Set to medium. Add remaining ingredients and stir in. Bring back to boil to cook in the cornstarch. Turn heat off and add some tapioca. Cook til thickened. Fill 8x8 baking dish that is set on a hotpad. Cover with the crumb topping. Cook at 350* for 35 minutes. Check for doneness and add more topping. Continue cooking until thoroughly bubbly, up to 30 more minutes.
