Plantation Bread Pudding image

This is an old recipe from a Louisiana plantation using a rum butter sauce. I have served this many times and its always a hit, not just because of the rum.

1 small French bread
2 eggs
2 cups sugar
1 tablespoon vanilla
1 (8 ounce) can fruit cocktail
1 cup raisins
1/2 cup butter
1 (12 ounce) can evaporated milk
1/2 cup butter
1 cup sugar
1 cup dark rum or 1 cup light rum

Steps:

  • For Bread Pudding.
  • Beat eggs, milk, melted butter and vanilla. Add raisins and fruit cocktail, when all ingredients are well blended, dice french bread and add to all the ingredients. Let soak for about 5 minutes, then pour into a 9 inch baking pan and bake 45 minutes in a 350 degree oven. Serve warm in dessert bowls with warm butter rum sauce.
  • For Rum Sauce.
  • Melt butter, add rum and sugar, blend well and bring to a boil. This sauce must be served warm.
  • It can be stored in the refrigerator and reheated.
