Pistachio-pesto crutst salmon or chilean sea bass image

4 pieces salmon or chilean sea bass
1/2 cup best-quality basil pesto
1/2 cup finely ground pistachios
12 ounces green beans trimmed
2 tablespoon olive oil
1 lemon

Steps:

  • Preheat the oven to 450 F. Season the fish with salt and pepper and arrange on a rimmed baking sheet. Spread each fillet with 2T pesto to cover completely.
  • Distribute the pistachios equally among the fillets, patting to form a crust.
  • Drizzle green beans with the oil and sprinkle with salt. Place around the fish.
  • Roast for 16 minutes until the fish is firm.
