Pinwheel Appetizers image

I made these for a PTA function a couple years ago. They went so fast and I was asked for the recipe a great deal. So I thought I would share it here. You can also just make it as a wrap for yourself.

3 c cooked wild rice
1 pkg 8 ounces cream cheese
1/3 c grated parmesan cheese
1 tsp dried parsley
1/2 tsp garlic powder
1/2 tsp dijon mustard
3 drops hot sauce
3 12 inch flour tortillas
2 1/2 oz sliced corned beef
9 fresh spinach leaves
SERVE WITH
hot sauce
your favorite salsa

Steps:

  • 1. Combine wild rice, cream cheese, parmesan cheese, parsley, garlic powder, mustard, and pepper sauce in a small mixing bowl.
  • 2. Spread evenly over tortillas, leaving a 1/2 inch border on one side of each tortilla.
  • 3. Place a single layer of corned beef over rice and cheese mixture.
  • 4. Top with a layer of spinach.
  • 5. Roll each tortilla tightly toward your 1/2 inch border. Moisten the border with a little bit of water and press to seal your roll.
  • 6. Wrap it tightly in plastic wrap and refrigerate for several hours or over night.
  • 7. Cut into 2 inch slices to serve. Makes about 36
