Pineapple Rice Creamy Salad image

A sweet fluffy Jell-O salad. The rice and pineapple add great texture. You can change out the Jell-O to make different color for every holiday- this one is good for St. Patrick's Day or Christmas too. This recipe works great frozen too. Line a loaf pan with foil overhanging on the ends so you can lift out easily to slice....

3 oz package lime jell-o
1 c boiling water
20 oz can crushed pineapple, drain, reserve juice
1/2 c of the reserved pineapple juice
1 1/2 c cooked fluffy rice, cold
14 oz can sweetened condensed milk, chilled (eagle brand)

Steps:

  • 1. Dissolve Jell-O in boiling water; add pineapple juice and chill for 1 hour to cool. Also chill the sweetened condensed milk for 1 hour. Beat condensed milk(NOT evaporated milk) on high for about 3 minutes, till thick. Beat Jell-O about 3 minutes with mixer on high until mixture is light and fluffy, then add the whipped milk. Fold in rice and well drained pineapple. Chill for about 1 hour.
