PINEAPPLE PORK KABOBS image

Number Of Ingredients 8

1 can (8 oz) unsweetened pineapple chunks
2 tbsp plus 1.5 tsp cider vinegar
2 tbsp brown sugar
dash pepper
1/2 lb pork tenderloin in 1-inch pieces
1/2 small sweet red pepper in 1 inch chunks
1/2 small green pepper in 1 inch chunks
rice, optional

Steps:

  • Drain pineapple, reserving juice; refrigerate pineapple. Combine pineapple juice, vinegar, brown sugar, & pepper. Pour half of marinade into plastic bag; add pork. Refrigerate 4 hours. Refrigerate marinade for basting. Drain pork. Thread items onto kabobs. Grill over med. heat for 10-15 min. Baste & turn occasionally.
