Pineapple Ginger Chicken image

I had a recipe years ago when I was first married for Pineapple Chicken. I modified it slightly and have been preparing this recipe ever since. It's a hit with my family! 3 lb chicken, cut up and skinless
1 can(s) crushed pineapple (in juice)
1 tsp soy sauce
2 Tbsp onion (minced)
1/2 tsp salt
2 Tbsp orange juice
2 tsp cornstarch
1/8 tsp ginger (ground)

Steps:

  • 1. Preheat oven to 375 degrees.
  • 2. Mix together undrained pineapple, soy sauce, onion and salt. Pour over chicken in a prepared baking dish.
  • 3. Bake for 50-60 minutes, uncovered, basting halfway through cooking time and when removed from oven.
  • 4. Place chicken on platter and skim fat from pan.
  • 5. Mix together 1/2 cup pan juices, orange juice, cornstarch and ginger. Cook and stir until thickened.
  • 6. Serve over chicken.
