Pineapple Fluff Dessert - Cassies image

CRUST
2 cup(s) graham cracker crumbs
1/2 cup(s) butter, melted
1/4 cup(s) sugar
FILLING
1/2 cup(s) butter. softened
1 1/2 cup(s) confectioners' sugar
1 - egg
1 teaspoon(s) vanilla
TOPPING
1 cup(s) whipping cream, whipped or ( two cups cool whip ) if using cool whip, disregard the sugar and vanilla
3/4 cup(s) drained, crushed pineapple
2 tablespoon(s) sugar
1 teaspoon(s) vanilla
- graham cracker crumbs or some coconut for garnish ( optional )

Steps:

  • Preheat the oven to 325 degrees F. Place rack in center of oven. In a medium bowl, combine the graham cracker crumbs, sugar and 1/2 cup melted butter. Press the mixture into a 9x9 baking pan. Bake for 10 minutes, then cool completely on a wire rack.
  • In a separate bowl, mix together the 1/2 cup softened butter, confectioners'sugar, egg, and vanilla with an electric mixer until smooth. Spread the mixture over the crust once it has completely cooled.
  • Prepare your whipped cream: Beat the cream, sugar and vanilla until stiff peaks form. Fold in the drained crushed pineapple; blend well. Spread whipped cream, pineapple over butter filling. I then sprinkled a handful of sweetened coconut on top. Refrigerate for at least an hour before serving.
