Delight in our delicious Pineapple-Cottage Cheese Gelatin Salad that uses shredded carrots and sunflower kernels for a little added crunch.

1 container (16 oz.) BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese
1 pkg. (3 oz.) JELL-O Apricot Flavor Gelatin
1 can (8 oz.) crushed pineapple in juice, undrained
1 cup shredded carrots
1 cup thawed COOL WHIP Whipped Topping
1/2 cup KRAFT Real Mayo Mayonnaise
1/4 cup PLANTERS Dry Roasted Sunflower Kernels, toasted
8 large lettuce leaves

Steps:

  • Mix cottage cheese and dry gelatin mix until blended.
  • Combine all remaining ingredients except lettuce in large bowl. Add cottage cheese mixture; mix lightly.
  • Refrigerate 1 hour.
  • Serve on lettuce leaves.
