PINEAPPLE COOKIES With Cream Cheese Glaze image

This recipe is my very favorite cookie recipe! The cookies are light and delicate and very delicious! Perfect for a bridal luncheon or women's group meeting. We have them on special occasions.

Number Of Ingredients 14

2 c all purpose flour
1 1/2 tsp baking powder
1/4 tsp soda
1/4 tsp salt
3/4 c crushed pineapple/drained reserve juice
1/2 c shortening/butter
1 c brown sugar, lightly packed
1 large egg
1 tsp pure vanilla extract
GLAZE TOPPING
1 c confectioners' sugar
2 -3 Tbsp reserved pineapple syrup
2 Tbsp cream cheese
1 Tbsp butter

Steps:

  • 1. Drain pineapple, reserving some syrup for the glaze. Cream shortening and sugar, add egg blend well. Mix in pineapple and gradually add dry ingredients, and vanilla.
  • 2. Drop by teaspoonfuls on cookie sheet (spray lightly with no-stick spray) Bake at 325 degrees for 10 - 15 minutes (depending on size of cookies)
  • 3. Mix 1 cup of confectioners sugar, the cream cheese, butter and enough reserved pineapple juice to make a soft glaze/frosting. Lightly frost cookies and let dry before stacking.
