Pineapple Chess Pie image

We had this at a church pot luck and my husband searched out who made it and got the recipe from her. It is fabulous

Number Of Ingredients 7

1 - 20 oz can crushed pineapple, drained well
1 cup(s) sugar
1 tablespoon(s) cornstarch
4 - eggs
1 - stick of butter (not margarine), melted
1 teaspoon(s) vanilla
1 cup(s) coconut or to taste. if you like more add more

Steps:

  • Beat eggs, sugar, cornstarch, butter and vanilla together. Add pineapple, blend then add coconut, blend well. Pour into pie shell. Bake 30-40 minutes, at 325 degrees. until a knife inserted the the center pulls clean.
  • For a more done crust prebake 10-15 minutes
