Pineapple Cake image

My husband is crazy about pineapple, and this cake hits the spot.Source unknown

Number Of Ingredients 11

1 can crushed pineapple, 20 oz
2 ½ cups flour
1 ½ tsp. baking powder
½ tsp. baking soda
¼ tsp. salt
½ cup butter, softened
1 cup white sugar
2 eggs
¾ cup packed brown sugar
¾ cup chopped pecans
¾ cup flaked or shredded coconut

Steps:

  • 1. 1. Preheat oven to 350. Grease a 13 x 9 inch baking pan; set aside. Drain pineapple, reserving juice, in medium bowl. Mix flour, baking powder, baking soda and salt. Set aside.
  • 2. In large bowl, beat butter with mixer on medium to high speed for 30 seconds. Add sugar. Beat til fluffy. Add eggs; beat til smooth. Alternately add flour mixture and reserved pineapple juice to beaten mixture, beating on low speed after each addition just til mixed. Fold in drained pineapple. Spread batter evenly in prepared baking pan.
  • 3. 3. In small bowl, mix brown sugar, pecans and coconut; sprinkle over batter. Bake for 30 to 35 minutes or til toothpick inserted near center comes out clean. Serve warm. Serves 12 to 16
