Pina Colada Pie image

Being pregnant I can't have the real thing so I had to improvise! This pie is very light and refreshing!! And don't forget yummy!!! I tried uploading a picture but for some reason it wouldn't work. I'll keep trying though!

Number Of Ingredients 9

1 c coconut milk
3/4 c coconut-pineapple nectar
4 Tbsp crushed pinapple, plus about 3-4 tbls. of the juice
1 1/2 tsp rum extract, divided
1 (3.4 oz) box instant vanilla pudding
1 c shredded coconut meat
8 oz cool whip (i used fat free)
1 graham cracker pie crust (i used the 2 extra servings one)
1/4 c shredded coconut, toasted, for garnish on top

Steps:

  • 1. In a large bowl, combine milk, nectar, pinapple and juice, and 1 teaspoon of the rum extract. Sprinkle pudding mix over liquid and whisk for 2 minutes. Fold in coconut and 1/2 of the cool whip.
  • 2. Pour into crust and chill for at least 3 hours.
  • 3. Combine the rest of the extract with the rest of the cool whip and top the chilled pie. Sprinkle with the toasted coconut.
