Pico Island Pot Roast with Allspice image

Carne Assada a Moda do Pico. A recipe from the Azores, off the coast of Portugal.

Number Of Ingredients 12

4 pound(s) boneless chuck roast
1 large onion, peeled and thinly sliced
1/2 cup(s) butter, softened
1/4 cup(s) wine vinegar
1/4 cup(s) water
2 clove(s) garlic, mashed
1 1/2 teaspoon(s) paprika
1 teaspoon(s) coarse salt
4 - whole allspice berries
1 small chili pepper
1 - 2-inch piece cinnamon stick
- white wine, as needed

Steps:

  • Preheat oven to 350F. Place the roast in a large Dutch oven.
  • Add remaining ingredients, except white wine, to the pot. Turn roast to coat. Pour in enough wine to come three-fourths of the way up the sides of the roast. Cover pan tightly.
  • Place the pan in the oven for 1 hour. Reduce heat to 200F. and continue to roast for 3 hours.
  • Serve, with juices, with buttered rice or potatoes.
