Pheasant Baked In Onion Rings image

I found this recipe years ago at The Outdoor Lodge at http://www.theoutdoorlodge.com. I haven't made this before so times and servings are estimates.

1 young pheasant, cut into pieces
1/4 c pancake mix
1 large onion, or 2 medium
1/4 c butter, melted
1 Tbsp lemon juice
1 tsp worcestershire sauce
salt and pepper, to taste

Steps:

  • 1. Roll pieces of pheasant in pancake mix (or seasoned flour).
  • 2. Arrange dredged pieces in a single layer in a greased shallow casserole.
  • 3. Slice onions and blanket pheasant pieces with onion rings.
  • 4. Cover with melted butter.
  • 5. Sprinkle with lemon juice, salt, pepper, and Worcestershire sauce.
  • 6. Bake in 375 degree oven until tender, about 1 hour. If more browning is desired, use 450 degree oven last 10 to 15 minutes and turn pieces as necessary.
