PEPPERONI CHICKEN image

Number Of Ingredients 11

2 boneless, skinless ckicken breasts, sliced lenghtwise to create four scallopini style fillets
Garlic powder
Sliced pepperoni
4 slices provolone cheese, cut in 1/2 moons
6 to 8 oz fresh mushrooms, sliced
1 pound pasta (preferably long noodles)
1 jar pasta sauce
Olive oil
Parmesan Cheese
Italian Parsley (optional)
capers (optional)

Steps:

  • Prepare chicken with olive oil, garlic powder, and salt and pepper. Coat large skillet with olive oil (approximately 2 Tbs). Heat oil over medium high heat until a drop of water sizzles in the pan. Place chicken and about a tablespoon of drained capers in pan and brown - approximately 3 minutes on each side. Remove and set aside. Saute mushrooms in same skillet/same heat setting until soft. Remove and set aside as well. Return chicken to skillet, cover each fillet with a layer of sliced pepperoni, 1/4 of the mushrooms, and top each with 2 half moons of the provolone. Pour sauce into pan, avoiding the assembled chicken and cover until the cheese melts. Plate pasta first and place your chicken breast in the center of the pasta. Spoon sauce over the chicken and pasta and finish with freshly grated parm and chopped italian parsley. Makes 4 servings
