SALMON WITH PAPAYA-MANGO SALSA image

1 pound salmon fillets
1/4 cup hazelnuts (or almonds), toasted and ground in a mini-chopper or blender
Butter
Salsa
1 ripe mango, diced (3/4 to 1 cup)
1/2 ripe papya, diced (3/4 to 1 cup)
1/2 cup diced red pepper
1/4 cup finely diced red onion
2 tablespoons finely chopped fresh cilantro
Juice of one lime
Dash of cayenne pepper to taste

Steps:

  • Mix salsa ingredients together in a small bowl. Let marinate for several hours or overnight. Remove skin from salmon and coat with ground nuts. Saute in butter. Top with salsa.
