Steps:
- Chicken Preparation Heat the oil in a skillet over medium heat then add the chicken, 1/4 tsp salt and pepper. Cook until the chicken is almost done (8-10 minutes). Pour in the chicken broth and simmer over low heat, allow the broth to simmer off. In a separate skillet melt the butter over medium heat. Add the minced garlic and chopped shallots and cook until lightlty brown - 2-3 minutes. Add this mixture and the drained artichoke hearts to the chicken and broth and continue to simmer on low heat. Bring 8 cups of water to a boil and add the salt and penne to the water. Cook the penne until firm - 8-10 minutes Add the tomato sauce to the chicken mixture and continue to simmer over low heat. Once the penne is cooked add the tomato and chicken sauce to the penne. stir and mix over low heat and serve. Garnish with Basil leaves
