PENNE WITH ARTICHOKES image

Number Of Ingredients 13

Juice of 1/2 lemon
2 cups artichokes, packed in oil
2 T olive oil
1 small bulb, thinly sliced, feathery tops reserved
1 onion, finely chopped
4 cloves garlic
1 handful Italian parsley, chopped
1 can (14 oz.) chopped Italian plum tomatoes
2/3 cup dry white wine
3 cups penne pasta
2 tsp. capers, chopped
salt & pepper
freshly grated parmesan

Steps:

  • 1. Heat oil in a large skillet and add fennel, onion, garlic, and parsley. Cooke over low heat about 10 minutes, until fennel has softened. 2. Add tomatoes and wine, with salt & pepper to taste. Bring to a boil, stirring, then lover heat, cover pan and simmer for 10-25 min. Stir in artichoke, cover, and cook for an additional 10 min. Meanwhile, cook pasta according to instructions. 3. Stir capers into the sauce, taste and add seasonings to taste. Mix sauce with pasta in a large bowl and serve.
