Pecan Raisin Scones image

I have had this recipe for years. I have been looking for it and came across it suddenly, of course that's the case! Very, very tasty! You can adapt it, take out pecans, add other fruit, etc.

Number Of Ingredients 10

2 cup(s) flour
2 tablespoon(s) sugar
2 teaspoon(s) baking powder
2 teaspoon(s) baking soda
1/2 teaspoon(s) salt
1 grated peel of a lemon
1/2 cup(s) butter, unsalted
1 cup(s) pecan pieces
1/2 cup(s) raisins, golden
3/4 cup(s) buttermilk

Steps:

  • Mix the flour, sugar, baking powder, baking soda, salt and lemon peel together in a mixing bowl.
  • Cut butter into small chunks, add to bowl and using a whisk on your mixer, mix together until butter is in small pieces. Add raisins and walnuts. Save out 2 Tbls. of buttermilk and then add the buttermilk. Mix until all dry ingredients are wet. Do not over mix.
  • Take out dough and pat into a square about 3/4" thick. Cut into 4ths, then cut each square in half so you have a triangle of dough. Place on prepared pan about 1" apart. Brush tops of scones with more buttermilk. Bake at 425 for 10 minutes.
