Pecan Pie for Two image

Perfect for the occasion when a whole pie is just too much.

pie pastry, prepared
1/3 c sugar
1 egg
1/4 c light corn syrup
2 tsp butter, melted
1/2 tsp vanilla extract
1/2 c pecan halves

Steps:

  • 1. Preheat oven to 350 degrees. Place 2 4x1 3/8" tart pans (with removable bottoms) on baking sheet.
  • 2. Whisk together sugar, egg, corn syrup, butter and vanilla until smooth.
  • 3. Place pastry in pans.
  • 4. Arrange pecans on top of pastry. Pour filling evenly over pecans.
  • 5. Bake 30 minutes, or until set.
  • 6. Transfer tarts to wire rack and cool completely. Remove from outer pan.
  • 7. Enjoy!
