Steps:
- In a shallow dish, combine the peanuts, bread crumbs, cilantro and 1/2 tsp salt & pepper.
- Soak wooden skewers in water to prevent burning. Thread each chicken strip onto a skewer and then coat each strip in peanut mixture pressing gently to help the coating adhere.
- Heat the oil in a large nonstick skillet over medium-high heat. Cook in batches until golden brown - approx. 2-3 minutes per side. Add more oil as needed. Transfer cooked chicken to a plate.
- In a small bowl, combine the mayonnaise and chili-garlic sauce. Serve as a dipping sauce for the chicken.
