Peaches and Cream Pancakes image

Number Of Ingredients 8

2 pieces Fresh Peaches
1/4 cup Maple Syrup
4 pieces Eggs
1 tablespoon Granulated Sugar
1/2 teaspoon Vanilla Extract
1/2 cup Gluten Free Flour (Coconut or Almond)
1/2 cup Cottage Cheese
1 cup Sweetened Whipped Cream

Steps:

  • Gently rub fuzz off peaches under running water and cut thinly sliced peaches in halves.
  • Whisk together eggs, sugar and vanilla.
  • Whisk in flour until smooth.
  • Add cottage cheese and stir to combine.
  • Heat 9 inch nonstick skillet over medium heat and add 1/2 teaspoon of butter to skillet.
  • Spoon 1/3 cup of pancake batter into melted butter and swirl for very thin pancakes.
  • Cook until batter firms, flip over, and cook until firm (approx. 1 minute).
  • Transfer to baking sheet and keep warm in 200 degree oven.
  • Serve with peaches and whipped cream.
