PEACH STREUSEL MUFFINS image

Streusel:
1/2 cup flour
2 Tbsp brown sugar
2 Tbsp sugar
1/2 tsp cinnamon
pinch salt
1/4 cup roughly chopped toasted pecans
1/4 cup butter, melted
Muffins:
1 1/2 cups flour
1/2 cup finely chopped pecans
2 tsp baking powder
1 tsp baking soda
1 tsp grated lemon zest
1/2 tsp cinnamon
1/4 tsp salt
1 egg
1 cup sugar
1 tsp vanilla
1/4 cup butter,melted
1/2 cup buttermilk
2 cups peaches or nectarines, large diced

Steps:

  • Preheat oven to 375 Line 12 large muffins cups Streusel: In a bowl, combine flour, brown sugar, sugar, cinnamon, salt, and pecans. Drizzlewith melted butter and toss with fork till evenly moistened (mixture will be chunky). Muffins: In a bowl,Whisk together flour, pecans, powder, soda, lemon zest, cinnamon and salt. In a separate bowl,combine egg and sugar,whisk until pale yellow in color,about 30sec.Whisk in vanilla till thick,about 30sec. Slowly whisk in melted butter, add buttermilk and Whisk till well combined. Fold flour mix into wet ingred. till just combined.(Over mix will make muffins tough) Gently fold peaches into batter. Sprinkle each muffin with streusel Bake till light golden approx. 30 mins
