PEACH PROSECCO SPRITZERS image

Yield 8 glasses

Number Of Ingredients 6

2 ripe peaches (about 1 1/2# total) pitted and coarsely chopped
1 1/2 T lemon juice
1 1/2 T sugar
1 (750ml)bottle Prosecco, chilled
About 1 1/2 cups club soda
Garnish: mint sprigs

Steps:

  • 1. Puree peaches with lemon juice and sugar. Add more sugar if desired. Strain into a pitcher pressing on solids.Stir in Prosecco. 2. Pour into 8 glasses 1/2 filled with ice. Top off with club soda.
