Pea-Prosciutto Sauce image

Number Of Ingredients 10

4 ounce(s) prosciutto, chopped
2 tablespoon(s) olive oil
3 clove(s) garlic, sliced
1 tablespoon(s) tomato paste
1 cup(s) pasta-cooking water
1/4 cup(s) heavy cream
1 pound(s) ravioli
1 cup(s) frozen peas, blanched
- parsley, chopped
- parmesan cheese, grated, for topping

Steps:

  • Cook the proscuitto in a skillet with the olive oil over medium heat until crisp, 4 minutes. Stir in 3 slices of garlic and tomato paste; cook 1 minute.
  • Ladle in the pasta-cooking water and simmer until reduced to half, 4 minutes. Add the heavy cream and simmer until thickened, 3 minutes.
  • Toss with the cooked ravioli, blanched peas, and some chopped parsley. Top with grated parmesan cheese. Enjoy!
