PAUL'S POTATO LATKES image

Yield approx. 10 latkes

Number Of Ingredients 8

4 large Idaho potatoes (2 pounds), peeled
1 small onion, peeled
1 large carrot, peeled
2 large eggs
1 tablespoon fresh parsley, chopped
Kosher salt
Freshly ground pepper
1 cup fine dry bread crumbs

Steps:

  • 1. Preheat oven to lowest setting to keep latkes warm. 2. Grate the potatoes, onion, carrot, with the largest holes of a grater, or use a food processor grating implement, and shred these together. 3. Squeeze out as much liquid as possible. 4. Combine vegetable mixture, egg, parsley, and salt/pepper to taste. 5. Stir in 1/2 of bread crumbs, then the rest of the mixture, then more crumbs, until mixture is thick enough to hold shape. 6. Shape into small mounds, then flatten with hands, into discs approx 4-5 inches diameter. 7. Fry latkes in hot oil until golden brown 4-5 minutes each side.
