Steps:
- 1. Heat oil in large skillet over medium heat. Add garlic and cook for 1 minute. Add onion and cook until softened, about 5 minutes. 2. Move onion and garlic mixture to the sides of the pan. Put sausage (without casings) in the middle of the pan (if the pan seems dry add another tbsp of olive oil). With the back of a wooden spoon break up the sausage and cook until it is no longer pink (about 8 minutes) 3. Add tomatoes with juice and pepper flakes. Stir everything together and cook over meduim-high heat until sauce is thickened, about 20 minutes. 4. Meanwhile, cook pasta according to package directions. Drain and toss with sauce in large bowl. 5. Toss with mozzarella cheese. Sprinkle with parmesan cheese and chopped parsley. Serve hot. * Makes 4 servings. Each 4 oz serving (if using turkey sausage): 190 calories, 6 g fat, 25 mg cholesterol, 310 mg sodium.
