PASTA WITH MUSHROOMS AND CHESTNUTS image

1/4 cup of speck
10 mushrooms
1 cup white wine
7 ounces (e.g 2 store-bought bags) of cooked and peeled chestnuts
Pint of heavy cream
Rosemary
Pepper

Steps:

  • Fry cubed speck or pancetta, add sliced shiitake mushrooms and fry with a bit of salt, until wilted and slightly browned. Add cooked, peeled and chopped chestnuts. Add white wine and cook until nearly dry. Add heavy cream, rosemary and pepper and simmer at low temperature until it reduced a bit. Salt to taste.
