PASTA WITH GALIC, OIL AND TOASTED BREAD CRUMBS image

1 lb. linguine
salt
1 T. butter
1/4 c. dry bread crumbs
2 T. Parmesan, grated
3 med. garlic cloves, minced
1/4 c ev olive oil
1/2 t. red pepper flakes
1/4 c. dry vermouth
ground black pepper

Steps:

  • 1. warm ovenproof serving bowl in 200 oven Prepare pasta, reserving 1/2 c cooking water before draining 2. Heat butter in 10" skillet over med.high heat until foaming, add bread crumbs and cook until golden brown, roasted and gragrant, about 2-3 min. Transfer to small bowl and mix in cheese and 1/2 t. garlic; set aside. Wipe out skillet with paper towel. 3. Mix remaining garlic with 1 t. water. Heat olive oil, garlic and pepper flakes in skillet over med. heat until fragrant, about 2 min. Add vermouth, reserved pasta cooking water, remaining salt and pepper to taste; cook to blend flavors, about 1 min. longer. Toss pasta and sauce in warm serving bowl; sprinkle bread crumbs over and serve immediately.
