Pasta Salad with Salami and Vegetables image

This is a quick and satisfying pasta salad. It's a go to recipe for me when going to a BBQ or a pot luck. It can also be adapted to your family by changing the meat and vegetables to reflect your tastes. I hope you enjoy it as much as we do.

Number Of Ingredients 10

1/2 pound(s) tortellini
1 cup(s) cubed salami or ham
1 cup(s) shredded carrots
1 cup(s) frozen peas or snap peas, blanched
1/2 cup(s) roasted red peppers, chopped
1/3 cup(s) extra-virgin olive oil
2 tablespoon(s) white wine vinegar
1 - shallot, minced
- freshly ground pepper
- kosher salt

Steps:

  • Bring a large pot of salted water to boil. Add the tortellini and cook as label directs; drain and rinse under cold water. Transfer to a large bowl.
  • Add the salami (or ham), carrots, peas, and roasted red peppers to the bowl with the tortellini.
  • Make the dressing: Whisk the olive oil, white wine vinegar, shallot, 1/2 tsp salt and pepper to taste in a bowl. Pour over the salad and toss to coat. Season with salt and pepper to tase.
  • Chill for up to 3 hours before serving.
