Parmesan Crusted Roasted Asparagus image

Crunchy on the outside and soft on the inside. Try them with ranch dip. I mix ranch dressing with a little BBQ sauce and mmmmm it's good. Great side dish.

1 lb fresh asparagus trimmed
2 large eggs beaten
1/2 c panko breadcrumbs
1/2 c parmesan cheese
olive oil to drizzle
salt to taste

Steps:

  • 1. Preheat oven 425 degrees. Line a baking sheet with foil. Place a wire rack on top of foil. Set aside. Bring a large pot of water to a boil. Blanch the asparagus in the boiling water for 1 minute. Immediately drain and throw asparagus in ice water bath to stop the cooking process and keep its green color.
  • 2. Place the eggs in one dish. Mix the breadcrumbs and parmesan together in another dish. Dip the asparagus in eggs and then dredge them in breadcrumb mixture.
  • 3. Lay the asparagus in a single layer on rack. Drizzle with olive oil and salt.
  • 4. Bake until browned about 7 to 1 minutes
